Summery Salad

I picked up some lovely organic pork meatballs from Waitrose (who can resist a 'reduced' bargain these days?), at the time I was thinking of a rich stew spiced with cumin, coriander and cinnamon to eat with a mound of cous cous and a dollop of yoghurt (serious comfort food) . Alas, the weather was having none of it, after sweating it home on the tube, the thought of cooking a stew and then eating was not appealing.

Off I went to the cookbooks and came back with this recipe from Delicious magazine. A fresh and summery salad of sweet peas, broad beans, crunchy radish and meatballs made by splitting open sausages and rolling them into balls. View this as completely open to interpretation - we used what we had in the fridge for ours, some thinly sliced fennel, peas, lettuce and red onion along with the lovey meatballs.



What brings the whole thing together is a generous scattering of mint and parsley and a deeply flavourful dressing made from (a lot of) anchovies, garlic and lemon juice.

Leave out the meatballs and this is a great side salad or try it grilled chicken or fish and here you could add capers for extra zing. I must admit I also mixed the leftovers with some bulghar wheat for my lunch - perhaps a little unorthodox but the extra carbs bulk it up and make it a little more exciting for lunch rather a leftover soggy salad.

Dressing
1 garlic clove
4tbsp olive oil
6 anchovy fillets, chopped
juice 1/2 lemon

To serve:
1 small bunch of mint and parsley, roughly chopped

To make the dressing, heat the anchovy fillets and olive oil gently until the anchovies melt, now add the garlic and lemon juice and some black pepper.

Spicy Sausage Pasta


A simple bowl of pasta. Cheap, cheerful and full of flavour.

Put a large pot of water onto boil, and cook some pasta - whatever you have to hand really. Heat a large chopped garlic and chilli in a glug of olive oil. Add a couple of sliced sausages and fry until golden brown and caramelised. Pour in a can of chopped tomatoes, season well, perhaps add a pinch of sugar and simmer for 10mins or so until it's reduced and full of flavour. Add your cooked pasta to the sauce, mix well and throw in some shredded basil if you have it.

Spaghetti with Tomato and Sausage

We got some tomatoes in the veg box this week, which was a welcome change, although we of course got the ubiquitous swede of course too (which I made into tasty rostis). I'm always a bit stumped as to what to do with tomatoes, cooking them seems to be a waste as I really want to make the most of their fresh, sweet flavour.

After a bit of time with my recipe books and Google, my favourite Saturday morning past time, I decided on a fresh pasta tomato sauce. I diced the tomatoes, added a little, salt, pepper, garlic and olive oil and left them to marinade before stirring them through hot pasta with a little creme fraiche.

If the tomatoes were firm, red and tasted of summer as I'd hoped, I'd definitely have skipped the creme fraiche and just added some basil. Unfortunately, they were a little insipid and overripe, so needed a boost, but at least I have a recipe for tomatoes past their best.

This spaghetti and almond pasta is another favourite way to eat tomatoes.


Ingredients

Serves 4

350g spaghetti
4 sausages
2 tbsp olive oil
300 tomatoes, roughly chopped
2 cloves garlic, roughly chopped
handful chopped thyme or oregano
6-8 tbsp creme fraiche

  • Cook the pasta in plenty of boiling salted water.
  • Add the garlic, 1tbsp olive oil and plenty of salt and pepper to the tomatoes, stir well and set aside.
  • Meanwhile, heat a frying pan. Cut a slit into the sausages, remove the skin and break up the filling into small pieces.
  • Add these to the pan with 1tbsp olive oil and thyme.
  • Fry until the sausage is golden, add the tomatoes, cooked pasta and creme fraiche and stir well before serving.

Sausage carbonara


I have a lot of Jamie Oliver books, they make good reading, but haven't actually cooked that many of his recipes, he's all about using amazing (expensive) ingredients simply, when I'm often not. That said, you can't really fault him, he does make beautiful food and on his Ministry of Food website, he's some delicious looking basic recipes too. I'm also mildly obsessed with his website, In this case, I found this rather decadent pasta dish that looked pretty simple, being a glutton in general, I always defualt to creamy pasta dishes as opposed to tomate-ey ones...

Jamie's Italian credentials are pretty good too, having worked at the River Cafe, with Gennaro Contaldo and travelling around Italy to write his book - Jamie's Italy, I'm always keen to try his pasta recipes.

This is a classic carbonara in that it uses eggs as the base, they are tossed with the hot cooked pasta, golden crispy sausage and bacon, and cooked gently to form a smooth and silky sauce. The emphasis being on gentle otherwise you'll end up with scrambled egg. Some lemon zest and parsley add freshness and cut through the richness of the sauce. Delicious and simple.
